Treating + Retreating

This weekend, I knew exactly what I needed to do. I needed to take a break, slow down, and do what felt best for me. As much as I love going out on the weekends, I also love waking up Saturday morning not hungover. So that’s what I did.

Therefore, the theme of this weekend was treating and retreating (and eating! haha).

cenote omelette

Sunday Brunch at Cenote. An omelette with arugala, goat cheese, sprouts, pesto, capers and mango pico de gallo. Cucumber, kale & mint juice on the side.

By the way – guess who’s off vegan! More on that later.

I took a break from going out, and made lunch dates with friends instead. Rather than sleeping in, I woke up early and tackled some workouts. It felt good! It’s all about balance, right?

Friday started out with some FABULOUSLY repurposed Chipotle leftovers.

Chipotle leftovers repurposed

So good. And so vegan.

I stopped by a nearby co op grocery store and grabbed their Chipotle Potato Salad (to diiiee for), and a cup of Kosmic Kombucha on tap (!!). I put my Chipotle sofritas burrito bowl leftovers over a bed of spinach, and added the potato salad & sliced avocado. Ridiculously good.

And even though I had time to spare on Saturday, it was an overnight oats kind of morning.

I feel so lucky to have access to inexpensive produce. I was able to pick up strawberries, mangoes, blackberries, mini bell peppers, cauliflower, celery and lettuce for under $10!

Since the sun was shining all weekend, I was inspired to do some “gardening.” I planted basil, mint, sweet basil, parsley, and some annuals. I have the furthest thing from a green thumb, so we’ll see how this goes.

planting flowers and herbs

The start of something beautiful, orrrr possibly a waste of $40. We’ll see. ; )

I hope my flowers and herbs can fend well in the upcoming Texas heat … though I tend to even kill indoor plants as well. My bad.

Though it was a fairly low-key weekend, it was just the retreat I was looking for. I’m hoping to keep these good vibes flowing into the week ahead!

  1. Sometimes you need some slow time, right? Lately I have been having more of that than less. I am guessing the weather is somewhat responsible because the heat just leaves me wanting to lay like a sack of potatoes! 😉 I have always wanted to plant a herb garden…so please share your progress! 🙂

  2. My weekdays are so jam packed I make sure my weekends are more low key and slower paced – yay for treating and retreating! PS that Sunday brunch is perfect!

  3. Oh girl I just love weekends like this. I am going to plant my herbs this weekend too – I love the smell and how easy they are to just add into recipes!! Don’t forget to water and you should be good!! Love that pic of your overnight oats – just gorgeous!
