It’s Monday and I Ain’t Even Mad

Something about this Monday just seems not so daunting. Coming off of one of the best weekends I’ve had in awhile, I feel recharged & ready to take on this week.

It was a perfect, glorious weekend filled with live music, friends, and sunshine. This weekend took its time. For once, I didn’t feel like it flew by. What a wonderful feeling!

I even got flowers from the love of my life, TJ.

Saturday night, I got real wild and crazy at the grocery store. I was hanging with a friend, and I requested a pit stop at HEB. When berries are on sale, you gotta do what you gotta do!

In between concerts, shopping, bar hopping, and catching up with friends, I also found some time to cook this weekend. On Saturday, I made another one of my friend Lauren (Clean Plate Diaries)’s cauliflower crust pizzas.

Unfortunately I dropped the ball and forgot to squeeze the excess moisture out of the cauliflower after cooking it. It still tastes great, I just have to eat it with a fork! ; ) Hey Lauren – looks like we both need to work on perfecting each others’ recipes! haha. I think we just need a reunion.

I also adapted these sweet potato black bean burgers by adding quinoa, sunflower seeds, nutritional yeast, and basically ignoring the measurements (haha). I’m super happy with how they came out.

It was a very solid weekend and I’m already looking forward to the next one.

  1. Thanks for the shoutout girl 😀 The name of this post made me smile big time. I felt the same way this weekend – in fact I was even able to wake up early, amazing what happens when you actually get enough sleep, who’da thunk.
    Wow all those recipes look so good! I made a cauliflower crust pizza a long time ago and I have no idea why I haven’t since – I’ll have to change that soon.

  2. I think you’re the first person i’ve ‘met’ that hasn’t been 100% pumped about the Fitbit! I’m with ya on that – I would much rather buy dresses and shoes and nail polish than a wearable fitness tracker. At least you gave it a try which is more than I can say!

  3. Seeing as it’s now Friday and I’m just reading this, hope you had a great week! I used to love going the grocery store on a Saturday night, because it is so calm and quiet and I can actually get through the produce aisle in peace! I am definitely approaching my mid-thirties. Lol.
    P.S. Love your (leggings or pants?) in the photo — super cute!! Where did you get them?
