WIAW – What I Ate Before Going Vegan

I mentioned yesterday that I would be going vegan for Lent. That means that yesterday, Fat Tuesday, was my last chance to eat anything & everything non-vegan before spending 40 days plant-based.

So what did I eat before going vegan? A burger? A steak? Sushi? Ice cream?

Surprisingly, I didn’t crave any of those things. Here’s a look at what I ate before going vegan!

Breakfast

Almond Joy egg white oats with almond butter, cocoa butter, cacao nibs, etc.My current favorite oatmeal variation – almond joy oats. This was old fashioned oats, 2 egg whites, 1/2 mashed banana, cocoa powder, unsweetened vanilla almond milk, sliced almonds, chia seeds, coconut butter, shredded unsweetened coconut, cacao nibs, and almond butter.

I can easily make this non vegan by taking out the egg whites — maybe adding some protein powder in their place.


Lunch

Torchy's Tacos Mr. Pink ahi tuna taco

Taco Tuesday via Torchy’s Tacos. This was Mr. Pink, an ahi tuna taco with cabbage, cilantro, lime, queso fresco & chipotle sauce on a corn tortilla. I had to get a fish taco in before giving up seafood.


Snack

The Perfect Cookie with Justin's Honey Peanut Butter

Mid-afternoon work snack was The Perfect Cookie with Justin’s Honey Peanut Butter. I knew I’d be saying goodbye to both of these soon.


Dinner

Trader Joe's jalapeno chicken sausage and peppers with sweet potato

One of my comfort foods — sausage and peppers. This was a Trader Joe’s jalapeno chicken sausage (so good!), sauteed red and green bell peppers, and 1/2 a sweet potato. After taking this photo, I added some alfalfa sprouts & ketchup to the sausage, and peanut butter to the potato (because I’m gross). ; )


Dessert – The Last Hurrah

Nonfat plain Greek yogurt, a cookies and cream Quest Bar, and green tea chai yogurt almonds as my last hurrah before going vegan for Lent

I considered going for ice cream or froyo, but I honestly wasn’t in the mood. I may regret that later, haha. But all I wanted was my staples – Greek yogurt, a Quest Bar, and some green tea chai yogurt almonds.

I broiled 1/2 the quest bar, and ate the other 1/2 with peanut butter. I made the yogurt into a parfait with strawberries, cinnamon, stevia & honey bunches of oats cereal (goodbye to that also).

So that was my last day of non vegan eats! I’m excited to see how this goes. In the meantime, I take comfort in knowing that there’s a big milk chocolate Easter bunny waiting for me at the end. =)

  1. I’m so happy to hear I’m not the only one who puts peanut butter on their sweet potatoes. I cook dinner with my boyfriend on the weekends and we always have sweet potatoes. He’s been so weirded out by my condiment choice. Haha

    Good luck with the vegan trial period! I’m excited to see what dishes you come up with! I’ve always wanted to give it a try 🙂

  2. That oatmeal combination looks great! 🙂 I’m glad to see I am not the only one who likes peanut butter/nut butter on everything.. including sweet potatoes.

    Good luck on your vegan journey! I think I would have to have a fish taco as well beforehand. LOVE FISH TACOS.

  3. Almond joy oats? That is pure genius – lately I can’t get enough of the almond coconut combo.
    This doesn’t count as food but I had my favorite GTS Raspberry Chia Kombucha yesterday and was made fun of by all my co-workers for drinking it. Haters gonna hate 🙂

  4. Oooh I’m interested to hear how your vegan experiment goes! I’ve been a vegetarian most of my life, but veganism is another story…. I definitely have a couple days a week when I eat all vegan meals, but I also eat some dairy sources often. I think that going vegan will definitely take you out of your food comfort zone and force you to try new foods and recipes. Good luck!
