I mentioned yesterday that I would be going vegan for Lent. That means that yesterday, Fat Tuesday, was my last chance to eat anything & everything non-vegan before spending 40 days plant-based.
So what did I eat before going vegan? A burger? A steak? Sushi? Ice cream?
Surprisingly, I didn’t crave any of those things. Here’s a look at what I ate before going vegan!
My current favorite oatmeal variation – almond joy oats. This was old fashioned oats, 2 egg whites, 1/2 mashed banana, cocoa powder, unsweetened vanilla almond milk, sliced almonds, chia seeds, coconut butter, shredded unsweetened coconut, cacao nibs, and almond butter.
I can easily make this non vegan by taking out the egg whites — maybe adding some protein powder in their place.
Taco Tuesday via Torchy’s Tacos. This was Mr. Pink, an ahi tuna taco with cabbage, cilantro, lime, queso fresco & chipotle sauce on a corn tortilla. I had to get a fish taco in before giving up seafood.
Mid-afternoon work snack was The Perfect Cookie with Justin’s Honey Peanut Butter. I knew I’d be saying goodbye to both of these soon.
One of my comfort foods — sausage and peppers. This was a Trader Joe’s jalapeno chicken sausage (so good!), sauteed red and green bell peppers, and 1/2 a sweet potato. After taking this photo, I added some alfalfa sprouts & ketchup to the sausage, and peanut butter to the potato (because I’m gross). ; )
Dessert – The Last Hurrah
I considered going for ice cream or froyo, but I honestly wasn’t in the mood. I may regret that later, haha. But all I wanted was my staples – Greek yogurt, a Quest Bar, and some green tea chai yogurt almonds.
I broiled 1/2 the quest bar, and ate the other 1/2 with peanut butter. I made the yogurt into a parfait with strawberries, cinnamon, stevia & honey bunches of oats cereal (goodbye to that also).
So that was my last day of non vegan eats! I’m excited to see how this goes. In the meantime, I take comfort in knowing that there’s a big milk chocolate Easter bunny waiting for me at the end. =)
