What I Ate Wednesday

Time to check in for another WIAW post! The highlights of this week included some more fall-themed overnight oats and a quick and easy beet, kale and walnut concoction, inspired by the farmer’s market. Check it out, and let me know what you’ve been enjoyin’ this week!

Breakfasts:

Amazinggg Apple Cinnamon Overnight Oats in a mason jar. Got me in the mood for fall!

This Sweet Potato Smoothie tasted better than it looked — blame the kale. It was 3/4 frozen banana, 1/2 cooked sweet potato (the secret ingredient!), unsweetened almond milk, cinnamon, kale, cinnamon and a scoop of peanut butter. Perfection!

Lunches:

Enjoying lunch outside with a veggie packed tuna salad and flavored sparkling water

Some days I come home for lunch. I enjoyed this veggie-packed salad with tuna and hemp seeds from my porch 🙂

Light lunch of rice cakes, avocado, peanut butter, banana and a Greek yogurt

Another lighter lunch. Got the best of every world with a rice cake with peanut butter & banana, a rice cake with avocado & tomato, and a nonfat plain Greek yogurt with banana/strawberry/chocolate almonds. I was in the mood for a bit of everything!

Dinners:

Trader Joe’s basil chicken sausage, sauteed bell peppers and hatch chiles (hotttt!) and a sweet potato with peanut butter.

Snacks and Sides:

A side salad made with kale, farmer's market beets, walnuts, olive oil and balsamic glaze

Nonfat plain greek yogurt, bananas, walnuts, cinnamon make a perfect mid-morning snackMid-morning work snack. Greek yogurt with bananas, walnuts, and pumpkin pie spice. Simple and perfect!
