1-Minute Mug Cake

Good morning to you! It’s been soooo hot in Texas lately – over 100 degrees every day!

After this winter’s FRIGID polar vortex up north, you’ll never hear me complain about the heat. But I can’t believe how the heat sucks the energy out of me! I used to be so ambitious and eager to walk everywhere… now I find myself feeling too lazy to walk like 30 feet. I’m thinking this is unique to August in Austin and it will get better as the temperatures “cool down” (wishful thinking?), right?

As a result, I felt like all I did after the gym was sit on my butt and eat food. Not the most productive use of an afternoon, but it could be worse! ; ) For dessert, I treated myself to a big, elaborate mug cake.

I followed Kim (@pbeechie on Instagram)’s recipe, which is super simple, low calorie, and delicious! Check out the finished product:

photo 1I mixed 1/3 of a cinnamon roll quest bar into the batter and topped it off with some Halo Top chocolate ice cream (GAME CHANGER!), sprinkles, and banana slices. Feels indulgent, but it’s totally guilt-free!

Questions for you-

  • Have you tried Halo Top Creamery light ice cream? I’m loving its low calorie, low sugar, high protein nutritional profile! It’s way better than Arctic Zero, in my opinion.
  • What’s your favorite way to beat the heat this summer?
