I’ve been stuck in an oatmeal/pb toast routine lately, so I was in the mood for something different today. I used one of my favorite go-to single serving pancake recipes. I love it because it’s easily customizable (apple? blueberry? pumpkin? easy!) and the nutritional profile is great. It’s basically the same as eating egg white oats.
Go-To Pancakes – makes 4-6 small pancakes
- 1/2 cup oat flour*
- 1/2 Tbsp coconut flour
- 1 tsp baking powder
- 1 tsp vanilla extract (I added a tiny bit of Imitation Vanilla Butter & Nut flavor as well)
- 1 Tbsp nonfat plain Greek yogurt
- 2 Tbsp unsweetened applesauce
- 2 egg whites
- 2 Tbsp unsweetened vanilla almond milk
- cinnamon to taste
- stevia to taste – I used about 1/3 packet
- blueberries, banana, chopped apple, nuts, whatever fill-ins you like
Combine dry, then wet ingredients. The batter should be thin, but not runny.
Coat a pan or griddle in non-stick cooking spray or coconut oil. Cook on low to medium heat for about 2 minutes on each side or until lightly browned. Be sure to watch them closely; they cook up pretty quickly!
*If you don’t have oat flour, you can make your own! Measure out the same amount of oats, then grind in a food processor or high-powered blender. My magic bullet woks just fine. : )

A lot of times, instead of maple syrup, I’ll make my own pancake topping. Typically it’s some variation of Greek yogurt + almond milk + stevia, but today I opted for a maple cinnamon peanut drizzle. Without really measuring anything out, I combined:
- peanut flour
- maple flavor
- unsweetened vanilla almond milk
- 4-5 drops vanilla stevia
Other exciting events in my life? I spent two hours last night assembling my coffee table. It was definitely a long process, but way easier than I thought it would be. I would say the apartment is 90% there, as far as comfort and functionality are concerned. I’m really happy with the way it’s coming together!
