Happy Saturday! What’s everybody been up to today?
For me, the last few days have been pretty evenly split between work and play. That’s how it should be, right? On Monday I got margaritas with my roommate, Tuesday I went with a friend to watch E.T. outside for Sound and Cinema, and Wednesday evening was yoga on the Whole Foods roof. I’ve been going every week, and it’s such a blast!
Yesterday I decided to get my workout in before work. A quick, sweaty 4-mile run! I was a little nervous about going for a run before work because I wasn’t sure if I allowed enough time to shower, have breakfast, and get ready for work. It turned out I had ample time! Nice. It definitely felt good to get my workout out of the way before most people were even out of the house.
I typically work out after work, but before I had a gym membership, I would wake up an hour early and do the Blogilates workout calendar. I was liking the results, but the videos got old kind of quickly. Thoughts on Blogilates, anyone?
I was happy I got my workout in before work, because I went straight from work to happy hour with my roommates! I got a glass of sangria and a seafood dish with shrimp, red snapper, tilapia, mussels, vegetables, and rice. Yum! I forgot to snap a pic, but the leftovers will soon be calling my name… : )
Afterwards, we headed to a food truck across town called Bananarchy. Ridiculous! We all got something different. The “Afternoon Delight” was dipped in peanut butter, chocolate, and vanilla and topped with graham crackers and nuts. The “Cookie Crumble” is choice of dip with Oreo and chocolate chip cookies… and I got The “Hippy Dippy” which was a frozen banana dipped in chocolate, granola, craisins, and cinnamon. Right up my alley!
It was a good evening — this is the last weekend in my current apartment, so it was nice to spend time with my roommates before we part ways!
Then, like many good Saturdays…
This morning began with pancakes. Cue Jack Johnson! Only no pretending… it is the weekend. ; )
Healthy Banana Walnut Pancakes
- 3 Tbsp oat flour
- 1 Tbsp coconut flour
- 1/2 stevia packet
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 2 egg whites (6 Tbsp)
- 2 Tbsp nonfat plain greek yogurt
- 1/2 mashed banana, plus 1/2 banana sliced into the batter
- 1/2 tsp vanilla extract
They browned up so nicely, and I love the nutritional profile on these! I typically top my pancakes with fruit and some sort of Greek yogurt/almond milk/stevia mixture, but today I was feeling them plain. With black coffee… always black coffee.
The rest of today was spent packing and taking care of logistical things for the big move. I didn’t get to spend as much time outside as I would have liked, but that happens sometimes. Hopefully tomorrow!
